Every variable the compose file, the gateway and config.py read, grouped
and explained, including the ones the Jarvis rework will need
(CLAUDE_CODE_OAUTH_TOKEN, TELEGRAM_*, T3_*, KOMODO_*).

hhandClaude Fable 5 a937500d9b feat(infra): compose profiles, Makefile, local override example 
All services sit behind profiles (db, gateway, obsidian) selected via
COMPOSE_PROFILES in .env; Makefile with the usual verbs and a `deploy`
target that pushes main:stable.
